People Pleaser Party Dip
The People Pleaser Party Dip started as a solution to upstairs parties at Chef and the Farmer but became something I actually look forward to making. It takes those deeply caramelized onions we always have on hand and turns them into a dip that's lighter and more addictive than the French onion packet version we grew up with - thanks to a hit of balsamic vinegar and Worcestershire. The best part? It tastes even better the next day, which means you can make it ahead whether you're planning a party or just want something good waiting in your fridge.
INGREDIENTS
2/3 cup R-Rated Onions
3 garlic cloves, grated on a microplane
2 tablespoons good balsamic vinegar
1 teaspoon Worcestershire sauce
4 ounces (1/2 an 8-ounce package) cream cheese, at room temperature
1/2 cup sour cream
1/2 cup Mayonaise
1 teaspoon kosher salt
1 teaspoon hot sauce
Chopped fresh chives, for garnish
Potato chips, for dipping
MAKE THE PEOPLE PLEASER PARTY DIP
In a small saucepan or skillet, cook the R-Rated Onions, garlic, vinegar, and Worcestershire sauce fora few minutes over medium heat until the onions have absorbed the liquid and the pan is nearly dry.
Meanwhile, in a mixer fitted with the paddle attachment, combine the cream cheese, sour cream, mayo, salt, and hot sauce. Paddle on medium until you have a homogeneous, lump-free mixture.
Once the onions have cooled slightly, add them and any residual liquid from the pan to the mixer. Paddle that for about a minute so the flavors get acquainted. Transfer to a serving vessel and chill for a minimum of 30 minutes, but preferably overnight, before serving. Crown with chopped chives and serve with your favorite potato chip.
